If there’s one thing I wouldn’t remove in my diet, it’s definitely the egg. And there’s no reason to because eggs are nutritious, cheap, and delicious.
One of our favorite breakfast meals is omelette (actually it’s perfect to eat any time of the day!) I can cook different variations or flavor combinations depending on my mood. This time I’ll be sharing with you my kids’ favorite omelet: Uni-Pak Mackerel Cheesy Omelette. My kids love this dish so much, madalas bitin sa kanila yung for 4 servings so I have no choice but to give my share to them hahaha.

Use Quality Ingredients
It’s important to use fresh eggs and quality ingredients. We love Uni-Pak Mackerel because they use the freshest ingredients for their canned products and they’ve passed quality control standards. Not to mention super siksik pa ng laman, hindi ka lugi!
Just how you would cook a basic omelette, saute the ingredients, add egg mixture, add diced cheese and herbs on top, and then fold. I’m a kitchen noob so my omelette looks a bit messy, but it’s really hearty and delicious.
I use butter to magnify the fish and egg flavors and I don’t overcook my omelette. Nobody likes a dried-out omelet, right? Soft and fluffy is the only way to go, so set the heat on medium low.
Uni-Pak Mackerel + Cheese
The secret to this recipe, aside from Uni-Pak mackerel, is the cheese. When it’s melted into the egg, it just makes the dish more interesting. What I also like about this dish is its strong umami flavor despite the short cooking time.

- 1 small can Uni-Pak Mackerel, flaked with a fork and drained
- 5 eggs, beaten
- 4 garlic cloves, peeled then chopped
- 1 onion, sliced
- 2 tomatoes, chopped
- cheese, diced
- salt
- pepper
- dried basil, crushed
- 1 tbsp butter
- Beat eggs and season with salt and pepper.
- Heat butter in a frying pan and saute garlic, onion, tomato, and mackerel flakes.
- Pour in egg mixture.
- Add cheese. Distribute evenly.
- Season with dried basil. Fold in half before serving.
